3 ekor cencaru dibersihkan dan dilomor dgn serbok kunyit
10 tangkai lada merah dibuang biji dan dikisar
8 biji bawang merah dikisar
1 sudu tecil belacan
garam dan gula
1 sudu kecil asam dicampur dgn sedikit air dan diramas, ambil airnya
minyak utk menggoreng
Ikan yang sudah dibelah tepi utk disumbat rempahnya.
Bancur lada, bawang merah, belacan, gula, garam dan air asam, paste biar pekat.
Sumbatkan rempah dlm ikan.
Panaskan minyak, goreng ikan hingga masak.
Hard-Tail Scad stuffed with chilli
3 hard-tail scad, cleaned and rubber with tumeric powder
10 red chillies, seeded and finely minced
8 shallots, peeled and finely minced
1 tsp dried prawn paste (belacan)
salt and sugar to taste
1 tbsp tamarind juice, made from 1 tsp tamarind pulp mixed with 1 tbsp water or to taste and strained
cooking oil for deep frying
Make a deep slit along one side of fish. set aside.
Mix chillies, shallots, prawn paste, salt, sugar and tamarind juice together to form a thick paste.
Stuff the paste into fish.
Heat the oil in a wok and deep fry until cooked. Serve immediately
