BEEF STEAK with BLACK PEPPER SAUCE


Beef Steak With BLACK PEPPER SAUCE
Resepi : Chef Amer Hamzah

Bahan - bahan :

40 gm mentega
2 ulas bawang putih
3 ulas bawang merah
5 gm bawang Holland
10 gm carrot
10 gm Celerry
1 keping Bay Leaf
1 gm Thyme
1 gm Oregano
1 gm Parsley
15 gm lada hitam biji
20 gm serbuk Stok Perang ~ jenama Knor (Tak tarok sbb tak de stock)
20 gm tepung
600 ml air
15 gm gula
5 gm garam
5 gm serbuk secukup rasa
25 ml krim tenusu (saya guna whip cream, itu yg ada dlm fridge)

Bawang putih, bawang merah, bawang Holland dikisar halus
Karot dan celery juga di kisar
Lada hitam pula ditumbuk atau dikisar kasar
Bahan-bahan ini dikisar tanpa menggunakan air

1.Mula-mula kita panaskan mentega
2. tambahkan sedikit minyak olive oil
3.Tumiskan bawang putih, bawang merah dan bawang Holland hingga garing
4.Kemudian masukkan karot dan celery masak lagi hingga garing
Selepas itu kita masukkan pula daun bay dan herba kacau perlahan
6.Masukkan pula tepung dan serbuk stok perang dan kacau hingga ia menjadi pes yang pekat dan hitam
7.Masukkan lada hitam dan kacau dengan api perlahan hingga naik bau
8.Tambahkan air dan bahan perasa, didihkan perlahan sambil di kacau hingga kuahnya sedikit pekat
9.Akhir sekali masukkan krim dan kacau rata.

*utk Daging, setelah cuci, saya toskan, kemudian lap dgn kitchen towel, baru bubuh sedikit garam dan lada putih. Grill dgn sedikit butter.

 Ingredients:

 40 gm butter
 2 cloves of garlic
 3 cloves of garlic
 5 gm of Holland onion
 10 gm carrot
 10 gm Celerry
 1 piece Bay Leaf
 1 gm Thyme
 1 gm Oregano
 1 gm Parsley
 15 gm of black pepper
20 gm brown stock powder 
 20 gm of flour
 600 ml of water
 15 gm sugar
 5 gm of salt
 5 gm of seasoning powder to taste
 25 ml of milk cream (I use whip cream, it's in the fridge)

 Garlic, onion, Holland onions are finely ground
 Carrots and celery too
 Black pepper is crushed or coarsely ground
 These ingredients are ground without water

 1. First we heat the butter
 2. Add a little olive oil
 3. Fry the garlic, shallots and Holland onions until golden brown 
 4. Then add the carrots and celery and cook again until fragrant 
 After that we add the bay leaves and herbs 
 6. Add flour and brown stock powder and stir until thick and black paste
 7. Put in black pepper and stir over low heat until fragrant
 8. Add water and seasoning, boiling slowly while stirring until the sauce is slightly thick
 9. Finally add the cream and stir well.

 * for Meat, after washing, I pull it out, then wipe it with a kitchen towel, then add some salt and white pepper. Grill with some butter.
