Lemon Barley Drink

2 rounded tablespoons barley
700 ml water
25 gm sugar
Juice of half lemon
2 lemon slices
1. Wash barley
2. Add water and bring to the boil
3. Lower the heat and simmer until the barley is soft
4. Add sugar and stir well
5. Strain to remove barley. Leave to cool.
6. Add lemon juice and lemon slices and chill drink in the refrigerator.
7. Pour into glasses and serve.
*Alternatively, leave the barley in the drink for fibre.
