Resipi dari dapur kzah, lauk generasi (lauk peranakan)
GERANG ASAM NYONYA

Bahan dikisar halus:
20 tangkai lada kering
20 biji bawang merah
4 biji bawang putih
5 biji buah keras
1.5 cm kunyit
2.5 cm lengkuas
3 batang serai
3 cm belacan
1 kuib ikan bilis
1 ekor ikan sederhana besarnya
Minyak untuk tumis
750 ml air asam yang diperah drpd 75 gm asam dan air 750 ml
2 serai dititik
3 helai daun limau purut
Gula dan garam
Sayur asin jeruk dipotong dan rendam.
Panaskan minyak, tumis bahan-bahan kisar dan serai.
Tuang air asam dan biarkan mendidih.
Masukkan ikan dan sayur asin yang telah ditoskan dan diperah, dimasak dgn api sederhana.
Masukkan daun limau purut, bende jika suka, garam dan sedikit gula.

Fine-grained ingredients:
20 stalks dried chillies
20 shallots
4 cloves garlic
5 pieces candlenuts
1.5 cm turmeric
2.5 cm galangal
3 stalks lemon grass
3 cm belacan (dried prawn paste)
1 cubes anchovies
1 medium-sized fish
Oil to fry
750 ml of tamarind juice extracted from 75 gm of tamarind pulp and750 ml of water
2 lemongrass- bruised
3 kaffir lime leaves
Sugar and salt
Salted vegetable pickles trimmed and soaked. (see photo above)
Heat oil and saute the grind ingredients and lemon grass.
Pour the tamarind water and bring to a boil.
Add the salted vegetables that have been squeezed out the water, add in fish,cooked with medium heat.
Add the kaffir lime leaves, salt and some sugar.
