SEMUR IKAN
Resepi ini dari dapur kak za. Rempah ratus yg disangar dan di kisar sendiri membangkitkan aroma semur ini.
Semur ikan
1 ekor ikan tengiri dipotong keping dicuci dsn digoreng dengan kunyit dan garam diketepikan dulu.
bahan A:
1 batang kayu manis
6 pelaga
2 lawang
6 cengkih
Bahan B di kisar:
3 batang serai
2 inci halia
2 inci lengkuas
6 biji bawang putih
10 biji bawang merah
20 tangkai lada kering
Bahan C disangar dan dikisar:
3 sudu makan ketumbar biji
1 sudu makan jintan putih biji
1 sudu makan jintan manis biji
1 sudu makan lada hitam biji
Bahan D:
4-6 sudu makan cuka / apple cider
4 sudu makan gula
Bahan E:
1 mangkuk air (terpulang )
6-8 sudu makan kicap manis cap kipas udang (bolih dilebihkan mengikut cita rasa sendiri)
Bahan F:
2 biji bawang besar dipotong bulat
2 biji tomato.yg besar dipotong bulat
Garam
Cara memasak:
Tumis bahan A
Masukkan bahan B dan C. Tumis sampai wangi.
Masukkan D, kacau dan masukkan E.
Masak hingga mendidih. Masukkan F dan ikan goreng
Biar masak lagi sebentar dan matikan api.

SEMUR FISH (in english)
1 spanish mackerel tail cut pieces washed coated with turmeric and salt fried aside first.
Ingredient A:
1 stick cinnamon
6 cardamom
2 star anise
6 cloves
Ingredient B to be ground:
3 stalks lemongrass
2 inch ginger
2 inch galanga
6 cloves garlic
10 red onion (shallot)
20 stalks dried chillies
Ingredient C fry without oil for awhile and ground:
3 tablespoons coriander seeds
1 tablespoon cumin seeds
1 tablespoon anise seeds
1 tablespoon black pepper seeds
Ingredient D:
4-6 tablespoons vinegar/ apple cider
4 tablespoons sugar
Ingredient E:
1 cup water depend on your need for gravy
6-8 tablespoons sweet soy sauce (may add more to yout taste)
Ingredient F:
2 large onion cut round
2 large tomato
salt to taste
Method:
Fry ingredient A.
Add the B and C. Saute until fragrant.
Add the D.. and add E.
Bring to a boil. lastly add F and the fish fry
Let it cook for a while and turn off heat
