Prawn Noodle-Mee Kuah Udang (Harmin)
Bahan A:
500 gm mee kuning, kuih tiau atau mi hoon
500 gm udang hidup di bersihkan kepala dan kulit utk jadikan stok
100 gm sawi di potong 5 cm panjang dan celor…ketepikan
50 gm taugeh di celor sebentar saja
Telor puyuh…rebos di kopek kulit
1 tin cendawan butang
Bawang goring
Tangcai
Daun sop dan daun bawang
Cili merah di cincang halus
Kicap cair
Minyak utk menumis
Bahan B: Perapan
6 sudu mkn sos tiram
6 sudu mkn kicap cair
2 sudu mkn minyak bijan
2 sudu kecil lada putih
Semua bahan B di gaul rata dan di bagi 3. 1 bahagian di perap dgn udang.
1 bahagian di perap dgn telor rebos, 1 bahagian di perapkan dgn cendawan butang.
Bahan C utk kuahnya:
Kulit dan kepala udang di bersihkan.. halia sebesar ibu jari di titik… dan air 5 mangkok di rebos.. kecilkan api biar mendidih hingga jadi 3 mangkok.
Di tapis stok dan buang ampasnya.
Cara memasak kuah: Panaskan minyak, tumis paste bawang putih hingga garing dan warnanya kemerahan..masukkan cendawan butang dan telor puyuh yg dah rebos..tuangkan stok udang ked lm periok dan rasa..tambah sos tiram dan kicap cair jika kurang..tambah.. biar mendidik
Cara menghidang: ambil sedikit mee yg dah celor, taugeh, sawi, tuangkan kuah, taburkan daun sop, bawang goring, kicap cili padi dan tangcai

500 gm yellow noodles, vermicelli noodle, kuih tiau
500 gm prawns, clean (head and shell for the stock)
100 gm of sawi (chye sim) cut into 5 cm in length boil in hot water a short while only, drain set aside
50 gm bean sprouts soak a little in hot water, drain, set aside
Quail eggs ... boil, peel off skin, set aside
1 can of button mushrooms
Ready fried onions
Tangcai
celery,spring onion leaves
Finely chopped red chilli
light soy sauce
Oil for sauteing
Ingredient B: for marinade
6 tablespoons oyster sauce mkn
6 tablespoons light soy sauce mkn
2 tablespoons sesame oil mkn
2 tsp white pepper
Mix ingredient B and divide into 3 part. One part marinade with shrimp.
One marinade with hard boil quil egg, one part marinate with button mushrooms.
Ingredient C for the broth:
Boil shrimp's head with 2 cm of ginger and 5 cup of water .. allow to boil over medium heat to become 3 bowl of stock. drain to take the clear stock only to be use later.

Heat oil and saute the garlic paste until fragrant .. add button mushrooms and quail eggs .. pour the shrimp stock.. add oyster sauce and light soy sauce

put the noodles, bean sprouts, chye sim, pour the gravy, sprinkle with spring onion, fried onions and tangcai. eat with finely chop red chilli with light soy sauce.
