SUP AYAM

Resepi yang mudah, resepi dari Chef Wan
  Sup Ayam
6 sudu besar minyak sayuran

Bahan A:
2.5 cm kayu manis
6 buah pelaga
3 bunga cengkih
2 kuntum bunga lawang
1 ekor ayam (1.5 kg)

Bahan B:
1.5 liter air
1 lobak merah besar, dikupas dan potong 5 cm panjang
2 ubi kentang, dikupas dan dibelah empat

Garam secukup rasa
Lada putih

untuk hiasan
Daun bawang
Daun ketumbar
125 gm bawang merah goreng

bahan kisar:
10 ulas bawang merah
2 cm halia
2 biji bawang putih
1 sudu besar lada hitam biji
2 sudu besar ketumbar biji
1 sudu besar jintan putih biji
1 sudu besar adas

*panaskan minyak dalam kuali dan tumis rempah kisar biarkan selama beberapa minit sehingga wangi.
* masukkan bahan A. Tumis lagi selama 5 minit.
* masukkan bahan B dan biarkan mendidih selama 1 jam dgn api perlahan.
* perasakan dengan garam dan lada putih. Tabur dengan bahan hiasan dan hidangkan segera.

CHICKEN SOUP
6 tbsp vegetable oil

Ingredient A:
2.5 cm cinnamon stick
6 pods cardamon
3 cloves
2 star anise
1 whole chicken (1.5 kg)

Ingredient B:
1.5 litre water
1 large carrot, peel and cut into 5 cm lengths
2 potatoes, peeled ang quartered

Salt to taste
Ground pepper to taste

For garnish
Spring onion ( scallion)
Coriander leaves (cilantro)
125 gm crisp fried shallots

Spice paste
10 shallots
2 cm ginger
2 clover garlic
1 tbsp black pepper corn
2 tbsp coriander seeds
1 tbsp cumin seeds
1 tbsp fennel seeds

*combine ingredients for spice paste in a food processor and blend until smooth.
*heat oil in a wok and fry the spice paste for a few minutes till fragrant.
*add ingredient A. Stir fry the mixture for 5 minutes.
*add ingredient B and simmer for 1 hour.
*season with salt and pepper. Springkle over with garnish ingredient and serve immediately.
