DAGING (EKOR) MASAK SIAM

Selalunya ekor lembu dimasak sup, apa kata kita masak daging masak siam..
sebut pasal siam agaknya pasti  ramai yg fikir masakkan ni ala tomyam.. Masakkan ni bnyk menggunakan daun2 spt daun limau, daun kunyit, serai dll yg membuatkn ia wangi mcm masakkan thai. Sedap..cukup dgn rempah ratus, dan terasa asamnya. Nk tau bagaimana rasanya.. Cobalah. Kzah bagikan bahan mengikut kategeri supaya senang mengikutinya.

EKOR LEMBU MASAK SIAM
2 kg ekor lembu atau 2 kg daging dipotong ikut suka.
Secukup air utk rebos daging
1 sudu kecil garam
4 helai daun limau
2 helai daun salam
1 helai daun kunyit

Rebos daging dgn bahan di atas hingga 3/4 empok.

Bahan kisar: A
30 tangkai lada kering. Bolih ditambah jika suka pedas.
5 ulas bawng putih
8 ulas bawah merah
1 inci halia muda
1 inci lengkuas muda
1 inci kunyit hidup
1 inci belacan

Bahan disangar tanpa minyak dan dikisar: B
2 sudu makan ketumbar biji
1 sudu teh jintan halus biji
1 sudu makan lada hitam biji

Bahan: C
2 batang serai diketuk
4 helai daun limau purut

Bahan: D ikut cita rasa sendiri
1 sudu makan gula
1/2 sudu teh perasa
1 sudu teh garam

Bahan: E
2 sudu makan kerisik

Bahan: F
40 gm asam jawa
300 ml air buat air asam

Panaskan minyak.. Tumis bahan A & B hingga wangi.
Masukkan bahan C.
Masukkan bahan D dan sedikit air rebusan daging. Tumis hingga kering dan wangi.
Masukkan bahan E dan daging serta air rebusan.
Masak hingga daging empok masokkan F. Biarkan ia renih dan pekat sedikit.

Usually oxtail used to cooked soup only,  Im creating my own recipe using herbs, fragrant leaves like kaffir lime leaves, tumeric, lemon grass and more.. to make it taste like siamese dishes ..
i category  each ingredients easy to follow.



Main ingredient:
2 kg oxtail or 2 kg of  meat
Sufficient water boil the meat
1 teaspoon salt
4 lime leaves
2 pieces of bay leaf
1 turmeric leaf
Boil the above ingredients the meat until 3/4 tender.

Ground Ingredients: A
30 stalks dried chillies... add more if you like spicy.
5 cloves garlic
8 cloves shallots
1 inch ginger
1 inch young galangal
1 inch of turmeric
1 inch of shrimp paste 


Fry this ingredient without oil and grind: B
2 tablespoons coriander seeds
1 teaspoon cumin seeds finely
1 tablespoon black pepper seeds

Ingredient: C
2 stalks lemon grass crushed
4 kaffir lime leaves

Ingredient: D (follow your own taste)
1 tablespoon sugar
1 / 2 teaspoon seasoning
1 teaspoon salt

Ingredient: E
2 tablespoons Kerisik ( coconut is grated, toasted, then ground to a paste; and sometimes refered as coconut butter)

Ingredient: F
40 gm tamarind add with
300 ml of water to extract tamarind juice

Heat the oil in the pot .. Saute ingredient A & B fry until fragrant. Add  ingredient C
Add in ingredient D and a cup  of beef broth. Saute until dry and fragrant.
Add ingredient E and meat together with the stock.
Cook until meat tender,add ingredient F. Let it cook and slightly thick on slow fire.
Serve with rice, bread etc.

    sedap nampak lauk daging siam ni..bolelah masuk list...kadang2 buntu betul daging nak masak apa..hehe..
