AYAM UNGKAP

Javanese cuisine. Simple and not spicy hot.
I added 5 bird eye chilli, turmeric leaves and kaffir lime leaves.

CHICKEN UNGKEP

Ingredient:

1 chicken (Cut 8.10 or 12)
30-40 gm coriander - finely ground
1 tablespoon cumin seeds - finely ground
6 small onion
4 cloves garlic
Turmeric roots - the size of your thumb
1 stalk lemongrass - crushed
3 tablespoons sugar, (I used 2 tablespoon)
Salt - to taste
2 cups of water
Oil for sauteing

The methods

Heat oil. Pound shallots, garlic and turmeric.
Saute the pounded ingredients, lemon grass. Add in coriander, cumin and lemon grass.
stir till the paste dry dry / crisp, season with salt and sugar. Mix well.
Add chicken. Mix well until the chicken is slightly shrink.
Add water. Mix again.
Close the pan and cook until the chicken is really tender and sauce thickens slightly.

Kak Zah tambah 5 lada padi, daun kunyit dan daun limau.

AYAM UNGKEP

Bahan-bahan

1 ekor ayam (Dipotong 8,10 atau 12)
30-40 gm ketumbar - dikisar halus
1 sudu besar jintan putih - dikisar halus
6 biji bawang kecil
4 ulas bawang putih
Kunyit - sebesar saiz ibu jari
1 batang serai - dititik
3 sudu makan gula- kak zah kurangkan 2 sudu makan
Garam - secukup rasa
2 cawan air
Minyak untuk menumis

Cara-cara

Panaskan minyak. Tumbuk bawang kecil, bawang putih dan kunyit.
Tumis bahan-bahan yang ditumbuk. Masukkan bersama ketumbar, jintan putih dan serai.
Apabila tumisan telah betul-betul kering/garing, masukkan garam dan gula. Gaul sebati.
Masukkan ayam. Gaul sebati sehingga ayam agak mengecut.
Masukkan air. Gaul lagi.
Tutup kuali dan masak sehingga ayam benar-benar empuk dan kuahnya sedikit pekat.
