1 kg daging kambing dipotong dadu
3 biji bawang besar, dihiris tipis
1 sudu makan pes bawang putih / halia
1 sudu makan pes tomato
1 biji tomato, di dadu
2 biji lada hijau belah 2 jangan putus
2 sudu makan rempah kari daging
1 sudu makan.lada serbuk
1 sudu teh serbuk garam masala
1 cawan daun pudina
Suku cawan santan pekat atau susu sejat
2 cawan air
5 biji buah pelaga
3 cm kayu manis
Minyak utk menumis
Garam secukupnya
Cara:
Panaskan minyak dalam periok. Tumis pelaga dan kayu manis sehingga wangi. Masukkan hirisan bawang dan tumis sehingga perang sedikit.
Tambahkan pula pes bawang putih / halia dan tumis sampai wangi selama 5 minit.
Masukkan tomato dan.lada hijau. Tumis hingga tomato hancur dan ladanya lembut.
Masukkan rempah serbuk serta daun pudina. Tuang satu cawan air. Gaul rata, tutup periuk, kecilkan api dan masak selama 15 minit.
Apabila masak dan minyak terpisah, besarkan sedkkit api dan masukkan kepingan daging. Goreng dan gaulkan sehingga daging bersalut dengan rempah selama 5 minit.
Tuangkan 2 cawan air dan tabur garam. Gaul, tutup periuk dan masak lagi dengan api sederhana sehingga daging empuk. Kacau setiap 5 hingga 10 minit. Akhir sekali tuang santan pekat atau susu sejat dan masak selama 15 minit lagi.
**Bolih dimasukkan kentang.. Di masukkan semasa menuang santan atau susu sejat.

LAL MUTTON
1 kg mutton - cubes
3 large onion, sliced thinly
1 tablespoon garlic / ginger paste
1 tablespoon tomato paste
1 tomato, diced
2 green chillies, halves and slit
2 tablespoons meat curry powder
1 tablespoon chilli powder
1 teaspoon garam masala powder
1 cup mint leaves
Quarter cup thick coconut milk or evaporated milk
2 cups water
5 cardamom
3 cm cinnamon stick
Oil for sauteing
salt to taste
Method to:
Heat oil, Saute cinnamon and cardamoms till fragrant. Add the sliced onions and saute until light brown. once onion brown, Add the onion and ginger paste. Saute until fragrant for about 5 minutes.
Add green chillies and tomatoes. Fry till tomato pulp and green chillies soften. Add in the spice powder and mint leaves. Pour one cup of water. Mix well, cover pot, reduce heat and cook for 15 minutes.
When oil separate from spices, turn fire to medium. Add in mutton pieces, stir fry until meat mix well with spices for 5 minutes.
Pour 2 cups of water and sprinkle salt. Mix, cover the pan and cook over medium heat until meat is tender. Stir every 5 to 10 minutes. Finally pour the thick coconut milk or evaporated milk and cook for 15 minutes.
** For those who like potatoes, can add a few .. cut each potatoes into 4 and add them, together with coconut cream or evaporated milk.
