Resepi puan Mumtaz yang terkenal dengan masakan India di ambil dari buku Mintak Ampun Sedapnya. Beliau sering menyumbangkan resepi2 yang sedap2 belaka di radio dan juga buku. Setiap resepi masakan India nya tidak mengecewakan. Kambing Mysore sedap dimakan dengan roti nan, roti jala, ketupat, lontong dll. Bagi yang segan dengan kambing..hehehe bolih ditukar dgn lembu atau ayam..
KAMBING MYSORE
Resepi: Puan Mumtaz Begum

1 kilo daging kambing dipotong
5 biji buah pelaga
1 jari kayu manis
3-4 biji bawang besar dihiris halus
2 sudu makan serbuk lada merah
2 sudu makan serbuk kari daging
1 sudu makan tomato puree
2 biji tomato segar dibelah 4
1 sudu makan halia kisar
1 sudu makan bawang putih kisar
Setengah cawan tairu ( kzah gunakan 150 gm)
2 cawan air
Minyak utk menumis
Garam secukup rasa
Cuci bersih daging dan hiris ikut suka.
Panaskan minyak dalam periok.
Tumis kayu manis dan pelaga hingga meletup letup.
Masukkan hirisan bawang dan tumis hingga lembut sikit.
Masukkan semua bahan lain, kacau rata dan masaklah hingga dagingnya lembut.. Kuahnya pekat dan naik minyak. Kacau setiap 15 minit supaya tidak melekat diperiok. Tambah lagi air jika perlu.

Mutton Mysore
Recipe: Mrs. Mumtaz Begum

1 kilo of mutton.. cut
5 cardamom seeds
1 cinnamon stick
3-4 large onion finely sliced
2 tablespoons chilli powder
2 tablespoons meat curry powder
1 tbsp tomato puree
2 fresh tomatoes cut 4
1 tablespoon grated ginger
1 tablespoon minced garlic
Half a cup of yogurt (kzah use 150 gm)
2 cups water
Oil for sauteing
Salt to taste
Wash meat and sliced .
Heat oil in a pot.
Saute cinnamon and cardamom.
Add the sliced onions and saute until little soft.
Add all other ingredients, stir well and cook until well blend and the mutton tender .. Gravy thickens and oil separated. Stir every 15 minutes so as not to stick at the bottom of the pot. Add more water if necessary .

2 cawan air
Minyak utk menumis

Masukkan hirisan bawang dan tumis hingga lembut sikit.
Masukkan semua bahan lain, kacau rata dan masaklah hingga dagingnya lembut.. Kuahnya pekat dan naik minyak. Kacau setiap 15 minit supaya tidak melekat diperiok. Tambah lagi air jika perlu.
