KURMA AYAM

Malay version
KURMA AYAM

1 ekor ayam dibuang kulit dan semua lemaknya, dipotong, dicuci dan toskan.
4 sudu makan rempah kurma
1 sudu makan pes halia
1 sudu makan pes bawang putih
2 biji bawang besar dikisar halus
4 batang lada hijau dikisar halus
1 batang serai dititik
2 biji bawang besar dihiris
4 kuntum bunga cengkih
4 biji buah pelaga
1 jari kayu manis
4 biji kentang, dikupas kulit dan dibelah 2
4 biji tomato dibelah 2
1 biji kobis yg kecil, dibelah 4
4 cawan santan dari 1 biji kelapa parut
1 cawan bawang goreng utk tabur
Segenggam daun pudina jika suka
Garam secukup rasa
Minyak utk menumis
Gaul rata rempah kurma dengan pes halia/ bawang putih sweta rempah kisar. Ketepikan.
Panaskan minyak didalam periok. Tumis cengkih, buah pelaga, kayu manis dan bawang hiris hingga wangi. Masukkan rempah. Tumis lagi sehingga rempahnya bertambah wangi.
Masukkan kepingan ayam, kentang dan santan. Setwlah kentang dan ayam empok, masukkan pula tomato, kobis dan garam.
Masak hingga kobis lembut.
Bolih juga dimasukkan daun pudina jika suka. Semasa menghidang taburkan bawang goreng.


English version
Kurma Ayam
1 chicken skin all fat removed, cut, washed and drained.
4 tablespoons Kurma powder (different from curry powder)
1 tablespoon ginger paste
1 tablespoon garlic paste
2 large onion..blend
4 stems green chilli..blend
1 stalk lemongrass..crushed
2 large onion, sliced
4 cloves
4 cardamom seeds
1 cinnamon stick
4 potatoes, peel skin and cut 2
4 tomatoes cut 2
1 cabbage, cut 4
4 cups coconut milk from one coconut
1 cup fried onions
A handful of mint leaves if desired
Salt to taste
Oil for sauteing

Mix well ginger paste, garlic paste, blend ingredient and kurma powder Set aside.
Heat oil in pot. Saute cloves, cardamom, cinnamon and slice onion until fragrant.
Add the mix spices that you put aside earlier. Saute until fragrant
Add Chicken pieces, potatoes and coconut milk. Let the potatoes and chicken cook.then add tomato, cabbage and salt.
Cook until cabbage is tender.
mint leaves may be add if desired. When serving sprinkle with fried shallots.
