Goreng hingga ia lembut, letakkan cili kisar, tumis hingga sebati. Tuangkan tepung lobak putih dan gaulkan rata2. Letakan garam dan gula sedikit bersama jeruk sengkuang. Kemudian letakan udang segar. Goreng udang supaya masak, tuangkan telur yang sudah di pukul kedalam kuali. Gaulkan rata2, biarkan telur nya masak bersama bahan2 lain. Sesudah itu letakan sedikit kicap pekat manis dan gualkan lagi. Tutupkan api dan taburkan dengan daun bawang dan bawang merah goreng. 1 kg minyak masak – guna separuh dan ditambah sedikit sedikit<br />
160 gram cili kering – rebus dan kisar<br />
1-2 keping gula Melaka<br />
Gula secukupnya<br />
2 keping asam keping – atau secukup rasa<br />
Garam<br />
1 kiub pati ikan bilis<br />
Sedikit aji no moto – jika suka<br />
2 helai daun pandan<br />
2 biji bawang besar Holland – hiris<br />

Bahan kisar:<br />
1 kg bawang merah<br />
100 gram/15 ulas bawang putih – opsyenal<br />
<br />
Cara cara:<br />
Panaskan minyak yang agak banyak sesuai dengan bahan yang hendak ditumis. Tips: mesti tumis sampai bawang yang dikisar hingga betul betul masak. Bila bawang masak, ia akan memberi bau wangi. Masukkan ikan bilis sekali dengan bawang supaya ianya perisa dan sebati.<br />
<br />
Boleh masukkan asam keping ketika ini, supaya rasanya lebih sebati dan lagi power. Masukkan daun pandan<br />
<br />
Masukkan cili kisar. Jika tidak cukup minyak, boleh tambah. Jika minyak cukup, sambal akan menggelegak. Biarkan sambal menggelegak sambil dikacau. Cili tak perlu dimasak lama sangat.<br />
<br />
Masukkan gula Melaka. Kacau lagi hingga ianya benar benar masak.<br />
<br />
Masukkan kiub ikan bilis dan garam. Kacau lagi.<br />
<br />
Masukkan bawang besar Holland yang dihiris dan serbuk perasa.<br />
<br />
Bila kuah telah pekat, boleh tambahkan sedikit air. Masukkan sedikit gula pasir dan sesuaikan rasa. Tambahkan apa apa rasa yang kurang.<br />

Nota:<br />
Sambal dimasak semalaman lebih awal, lagi sedap.<br />

Istana Topkapi dengan HAREM di Istanbul pastinya merupakan salah satu acara utama. Istana ini digunakan sebagai kediaman Sultan Uthmaniyyah antara abad ke-15 dan ke-19. Mereka berkongsi istana dengan keluarganya, hamba, gundik dan sida(eunuch) yang menjadi pengawal Harem. Topkapi sangat besar dan mengandungi 4 halaman utama dengan taman yang indah, dapur yang besar, masjid, hospital, banyak pavilion(astaka, balairung) dan Harem. Harem adalah bahagian yang paling Indah.<br />
Jika anda ingin melawat Istana Topkapi, saya cadangkan pergi ke sana lebih awal. Sebaik sahaja anda masuk dan berjalan ke bahagian halaman Kedua, belok kiri ke Harem. Bangunan ini sangat mudah dikenali menerusi Menara Keadilan (Tower of Justic) Betul dibawahnya, anda akan dapati pintu masuk Harem.<br />
Sebaik sahaja anda masuk ke dalam, anda akan melihat keindahan mozek, jubin berwarna warni. Semakin anda meneruskan berjalan masuk, semakin terpegun. Penggunaan warna, tingkap kaca berwarna, Ayat2 Al-Quran dalam marmar dan emas, ... semuanya sempurna.<br />
Bilik yang paling mengagumkan ialah Chambers of the Crown Prince dan Imperial Hall. Di sini anda akan dapati Arasy Sultan. Tetapi juga ruang Privy Murad III, sungguh Indah. Ia juga mempunyai air pancutan.<br />
Di luar harem banyak astaka (balairung) yang indah dapat ditemui, semuanya dengan tujuan mereka sendiri seperti bilik sunat, Astaka sofa, Dan bnyk lagi Astaka.<br />
Bila berada di Turki, jangan lupa singgah ke Topkapi & Harem. Istana ini dibuka setiap hari, kecuali hari Selasa, dari jam 9 pagi - pukul 6.45 malam. Harga tiket murah (hanya 30 TL untuk kedua-dua istana dan Harem. Harga semasa Zah kesana pd April 2015).<br />

**HAREM: kawasan bilik2 khas utk isteri-isteri, gundik raja, keluarga Dan sida(eunuch) pengawal Harem, Lelaki tidak dibenarkan masuk kecuali yg bolih dipercayai dan yang sudah di MANDULKAN, biasa ya betkhidmat di istana bahagian kediaman wanita.<br />

Topkapi Palace with HAREM in Istanbul is definitely one of the main events. The palace is used as the residence of the Ottoman Sultan between the 15th and 19th centuries. They share the palace with their families, wives, servants, mistresses and eunuchs who are guards of Harem. Topkapi is very large and contains 4 main courtyards with beautiful gardens, large kitchens, mosques, hospitals, lots of pavilions and harem. Harem is the most beautiful part.<br />
If you want to visit Topkapi Palace, I recommend going there early. Once you enter and walk to Second section, turn left into Harem. The building is very easily recognizable through the Tower of Justice, just below it, you will find the entrance of Harem.<br />
Once you get inside you will see the beauty of mosaics, colorful tiles. The more you continue to walk in, the more stunned. The use of colors, stained glass windows, Quranic verses in marble and gold, ... are all perfect.<br />
The most impressive rooms are Chambers of the Crown Prince and Imperial Hall. Here you will find the Sultan's Throne, also Privy Murad III room, really Beautiful. It also has a fountain.<br />
Outside the harem many lovely pavilions can be found, all for their own purposes such as circumcision room, sofa pavilions , And more. .<br />
When in Turkey, do not forget to stop over to Topkapi & Harem. The palace is open daily, except Tuesday, from 9am - 6.45pm. Cheap ticket prices (only 30 TL for both palaces and Harem. The current price when I visited in April 2015).<br />

** HAREM: Special room area for wives, king's concubines, family and eunuch (Harem guards), Men are not allowed except those who are trusted and who are in the , sterlize, usually serving in the palace of the women's residence.<br />

20 gm serbuk Stok Perang ~ jenama Knor (Tak tarok sbb tak de stock)<br />
20 gm tepung<br />
600 ml air<br />
15 gm gula<br />
5 gm garam<br />
5 gm serbuk secukup rasa<br />
25 ml krim tenusu (saya guna whip cream, itu yg ada dlm fridge)<br />

Bawang putih, bawang merah, bawang Holland dikisar halus<br />
Karot dan celery juga di kisar<br />
Lada hitam pula ditumbuk atau dikisar kasar<br />
Bahan-bahan ini dikisar tanpa menggunakan air<br />

1.Mula-mula kita panaskan mentega<br />
2. tambahkan sedikit minyak olive oil<br />
3.Tumiskan bawang putih, bawang merah dan bawang Holland hingga garing<br />
4.Kemudian masukkan karot dan celery masak lagi hingga garing<br />
Selepas itu kita masukkan pula daun bay dan herba kacau perlahan<br />
6.Masukkan pula tepung dan serbuk stok perang dan kacau hingga ia menjadi pes yang pekat dan hitam<br />
7.Masukkan lada hitam dan kacau dengan api perlahan hingga naik bau<br />
8.Tambahkan air dan bahan perasa, didihkan perlahan sambil di kacau hingga kuahnya sedikit pekat<br />

1. First we heat the butter</div>

1 ekor ayam (dipotong ikut suka dan jika suka digoreng 1/2 masak)<br />
2 labu bawang besar (dihiris bulat dan digoreng)<br />
2 sudu makan biji lada hitam (ditumbuk)<br />
2 sudu makan cili kisar/cili giling<br />
2 sudu makan kicap pekat<br />
1 sudu makan sos tiram<br />
sedikit kicap manis<br />
sedikit hirisan daun sup<br />
sedikit madu/gula dan garam<br />
sedikit air asam jawa<br />
rempah 4 sekawan (kayu manis, cengkih, bunga lawang dan buah pelaga)<br />
bahan-bahan kisar :<br />
10 biji bawang merah<br />
4 ulas bawang putih<br />
1.5 inci halia<br />
2 batang serai<br />
Kentang, Carrot.. optional<br />
<br />
Cara-cara :<br />
Gaul-gaulkan ayam yang sudah digoreng tadi bersama lada hitam dan kicap pekat. Perapkan sebentar selama 1/2 jam.<br />
Sediakan minyak masak untuk menumis. Tumis rempah 4 sekawan dan bahan kisar hingga wangi. Kemudian masukkan cili giling. Tumis lagi hingga pecah minyak.<br />
Masukkan sos tiram dan kacau sebati.<br />
Kemudian masukkan ayam. Gaulkan rata-rata.<br />
Masukkan air secukupnya. Kacau dan biarkan ia mendidih seketika.<br />
Masukkan pula kicap manis, garam, gula/madu dan air asam jawa. Akhir sekali dimasukkan daun sup. Setelah kuahnya kelihatan pekat, tutupkan api. Masukkan bawang goreng tadi dan gaul-gaulkan.<br />
Hidangkan panas-panas bersama nasi putih, nasi beriani, nasi serai, nasi tomato dan sebagainya. Sedap!<br />

2 kg Ketam yg besar di bersihkan, goreng minyak tenggelam selama 3-4 minit hingga ketam merah, angkat dan toskan minyak.<br />

Bahan A:<br />
3 sudu makan mentega/ marjerin<br />
Sedikit minyak masak<br />

Bahan B:<br />
2 biji bawang besar-potong dadu<br />
7 biji bawang putih di cincang halus<br />

Bahan C:<br />
3 sudu mkn lada hitam biji ditumbuk kasar Dan disangar<br />
1 sudu makan lada putih biji ditumbuk kasar di sangar<br />
6 biji lada padi dipotong bulat<br />
3/4 cawan daun Kari<br />

Bahan D:<br />
3 sudu makan sos tiram<br />
3 sudu makan sos tomato<br />
3 sudu makan kicap pekat<br />
2-3 sudu makan kicap cair <br />
Sedikit air dlm 2 cawan<br />
Gula secukup rasa<br />

Panaskan didalam kuali bahan A.<br />
Tumis bahan B hingga naik bau.<br />
Masukkan bahan C, gaul rata.<br />
Tuangkan bahan D, kacau rata tabur sedikit gula.<br />
Masukkan ketam, gaul dan balik-balikkan supaya rempahnya rata dan meresap. Kemudian tutup kuali.<br />
Biarkan sehingga ketam masak dan berubah warna. Apabila kuahnya hampir pekat, Masukkan bahan E dan Kacau rata hingga kuahnya pekat. Matikan api dan angkat.<br />
Enak dimakan dengan nasi atau roti Perancis atau diratah begitu saja.<br />

MEE REBUS<br />
Ingredients:-<br />
1/2 kg tetelan (beef with little fats) boil until soft and reserve the stock aside<br />
for the gravy (Boil with 2000ml of water, reserve about 1000ml stock)<br />
300 g medium prawns deshell, boil and use the stock to grind into paste<br />
<br />
Grounded Ingredients to paste:-<br />
8 to 10 nos. dried chillies or just used 2 tbsp full chili paste<br />
8 nos.shallots<br />
5 nos. garlics<br />
2 inches galangal<br />
1 cup dried udang geragau (Shrimp Acetes indicus)<br />
<br />
1 cup taucho..rinsed, drained & mashed or blend<br />
1 cup roasted grounded peanuts.. may also blend<br />
2 nos. bruised lemongrass (serai)<br />
5 tablespoon coriander powder (serbuk ketumbar)<br />
1 1/2 cup sugar to taste (gula pasir)<br />
1/2 cup brown sugar (gula merah) to taste<br />
salt & seasoning to taste(2 chicken cubes)<br />
(Garam Dan Perasa)<br />
200 g sweet potatoes (deskined boiled and mashed)<br />
1/2 cup sweet potato flour add water about 200ml for thickening<br />
2000ml water and 1000ml stock so about 3000ml<br />
1.5 kg yellow noodles(mee kuning)<br />
Bean sprouts (Taugeh)<br />

GARNISHING<br />
10 nos. boiled eggs<br />
2 pcs beancurd cut to cubes and fry<br />
10 nos. lime cut into halves ( limau kasturi )<br />
some shredded chinese parsley (daun soup) and spring onions (daun bawang)<br />
fried shallots (bawang goreng)<br />
<br />
METHODS<br />
1. Heat oil, saute the grounded ingredients, add bruised lemon grass till fragrant.<br />
2. Add in coriander powder and the 1000ml stock together with the boiled tetelan which has been cut to small pieces.<br />
3. Leave to simmer and add in the 2000ml water, tauchoo, peanuts, salt, seasoning and sugar leave to simmer for a while and add in the prawn paste and the mashed sweet potatoes cook for about 20 minutes over medium heat and lastly add in the thickening until just right. Do not add in all just right not too thick or not too thin. Then cook over low heat to let it set..<br />
4. For the sugar & salt please adjust to taste.<br />
5. Boil water, dip in the noodles needed with taugeh, drain the water . Place into serving bowls. Pour in the gravy and garnish with garneshing ingredients. Can add some dark soya sauce for the garnish too. Mee Rebus garnishing can be bagedil, fried chicken, bones or etc...<br />

Masukkan pes tomyam, dan masak sekejap.Tuang air secukupnya (dalam 3 cawan). Kacau dan masukkan kiub ikan bilis, jika guna. Biar mendidih.</li>
<li style="margin: 0px 0px 0.25em; padding: 0px; text-align: justify;">Tambah lobak merah, saderi, bawang besar dan bunga kobis. Bila lembut sedikit, masukkan daun limau purut, pokok ketumbar dan juga ikan sardine. Tambah juga 3 camca besar sos sardine tadi. Kacau perlahan. Biar mendidih dengan api sederhana. Jika kurang kuah, boleh tambah air.</li>

Bahan A: dikisar halus<br />
20 tangkai lada kering digunting di cuci dan direndam<br />
1 sudu besar belacan ( jika suka)<br />
3 biji bawang besar<br />
5 biji bawang putih<br />
1 inci lengkuas<br />
2 inci kunyit hidup<br />
Setengah cawan udang kering direndam<br />
3-5 biji buah keras<br />
3 sudu makan membumbung serbuk ketumbar<br />
<br />
2 btg serai di titik<br />
<br />
Bahan B:<br />
500 gm udang hidup<br />
750 ml air utk rebus udang<br />
1 sendok lauk minyak utk menumis<br />
1000 ml air utk kuah<br />
1200 ml santan pekat 2 biji (santan kotak pun bolih.. 3 kotak) bolih tambah jika ingin lagi lemak.<br />
Garam<br />
2 sudu besar Gula<br />

Bahan Sampingan:<br />
1.5 kg mee laksa dicelor<br />
500 gm taugeh<br />
4 keping fish cake dihiris<br />
Fish ball<br />
Timun dihiris<br />
Daun kesum dipetik dicuci dan dihiris<br />
Telor ayam/ telor burung direbus<br />
Tauhu pok<br />
<br />
Rebuskan udang dgn 3 cawan air. Kacau hingga udang bertukar warna kemerahan. Toskan dan sejukkan baru kopek kulit dan buang kepala.<br />
Air rebusan di ketepikan utk buat kuah.<br />

Panaskan periok.. tumis bahan2 kisar hingga wangi. Masokkan air sedikit demi sedikit pd tumisan agar tidak hangus. Bila garing..masukkan air rebusan udang dan 4 cawan air paip berserta santan pekat.. Kacau slalu kuahnya agar tidak pecah minyak. Masukkan tahu pok, garam dan gula. Kecilkan api dan masak hingga tahu pok lembut.<br />

Utk sambal:<br />
Setengah cawan lada kisar<br />
15-20 cili padi dikisar<br />
Sedikit belacan<br />
Sedikit garam<br />
<br />
Satukan semua bahan dan masak diatas api hingga pekat.<br />
<br />
Cara hidang:<br />
Bubuh secukup mee laksa dlm mangkuk, hias dgn udsng, telor rebus, hirisan fish cake, taugeh, hirisan timun dan daun kesum. Tuangkan kuah secukupnya dan bubuh sambal.<br />

Tomato Chilli Prawn<br />

500 gm Prawn.. lightly fry with salt & tumeric powder, drain and put aside<br />
<br />
Ingredient A: slice<br />
2 big Onion<br />
4 garlic<br />
1.5 cm ginger<br />
<br />
Other Ingredient:<br />
3 tablespoon tomato sauce<br />
2 tsblespoon chilli sauce<br />
2 tablespoon mustard seed<br />
2 stalk of curry leaves<br />
Sugar & salt to taste<br />
<br />
1 medium fresh tomato.. slice.<br />
<br />
Heatup oil in a pan and saute ingredient A, curry leaves, mustard seed about 5 minutes till fragrant.<br />
<br />
Add in chilli paste and stir for awhile till fragrant.<br />
Add tomato sauce, chilli sauce, prawn, salt & sugar.<br />
Lastly add in fresh tomato and off fire.<br />

Panaskan minyak dan tumis bawang hiris.<br />
Masukkan bahan kisar..kacau rata hingga naik bau.<br />
Masukkan lada kisar.. tumis hingga garing dengan api yg sederhana kecilnya.<br />
Masukkan sedikit air, sos tiram, kicap, gula dan garam.. biar hingga terbit minyak.<br />
Masukkan lobak merah dan sedikit air utk melembutkkan lobak.. bila da lembut sikit masukkan sotong/ udang .<br />
Jika sotong, masak sekejap aje dan masukkan mee.<br />
Bila rata dan meenya lembut.. masukkan sayuran. Gaul rata, rasa dan hias semasa menghidangkan.<br />

<span style="line-height: normal;">8 biji cili merah (8 red chilli)</span><br />
<span style="line-height: normal;">4 biji cili hijau (4 green chilli)</span><br />
<span style="line-height: normal;">10 biji cili padi merah (10 bird eye red chilli)</span><br />
<span style="line-height: normal;">2 sudu besar belacan-bakar sebentar (2 tbsp shrimp cake)</span><br />
<span style="line-height: normal;">4 biji tomato buah (4 tomato)</span><br />
<span style="line-height: normal;">6 biji limau kasturi (6 small lime)</span><br />
<span style="line-height: normal;">sedikit garam dan gula (sugar & salt)</span><br />

<span style="line-height: normal;">Cara-cara</span><br />
<span style="line-height: normal;">Cili merah dan cili hijau dipotong pendek.</span><br />
<span style="line-height: normal;">Tomato dihiris dan limau dibelah dua, ketepikan dulu.</span><br />
<span style="line-height: normal;">Masukkan semua cili dan belacan bakar ke dalam lesung dan tumbuk sehingga lumat.</span><br />
<span style="line-height: normal;">Masukkan tomato yg di hiris, sedikit garam dan gula.</span><br />
<span style="line-height: normal;">Lenyekkan tomato tu sedikit dan gaul sebati.</span><br />
<span style="line-height: normal;">Perahkan jus limau kasturi dan boleh lah di hidangkan.</span><br />
<span style="line-height: normal;">Hidangkan bersama ulam2an dan lauk kegemaran.</span><br />

<span style="line-height: normal;">Cut red & green chilli.</span><br />
<span style="line-height: normal;">Slice tomato.. cut halves the limes..</span><br />
<span style="line-height: normal;">Put all the above ingredients in mortar or blender..</span><br />
<span style="line-height: normal;">Add slice tomato, belacan and grind.</span><br />
<span style="line-height: normal;">Add in tomato, salt and sugar.. squeeze limes and serve..</span><br />

Bahan A:<br />
125 gm butter<br />
Setengah cawan brown sugar (half cup)<br />
1 cawan madu (1 cup honey)<br />

Bahan B:<br />
1 kotak( box) 500gm Nestle Cornflakes<br />
1 cawan kismis (optional) 1 cup raisin<br />
1 cawan badam/ gajus di panggang (1 cup almond/ cashew.. roast)<br />
<br />
Hiasan: (decoration)<br />
Paper cup<br />
Ceri merah/hijau ( red & green cherry)<br />
Manik2<br />
<br />
Panaskan A hingga butter cair.<br />
Setelah butter cair.. tutup api.<br />
Masukkan B dan digaul rata.<br />
Sudukan dlm paper cup dan hiaskan.<br />
Bakar dlm oven yg telah dipanaskan dulu selama 8 hingga 10 dgn suhu 170c<br />
Sejukkan dan tutup dlm kedap udara.<br />

Method:<br />
Heat A on stove till butter mrlt.<br />
Off the fire.<br />
Add in B and mix well.<br />
Put the mix cornflakes in papercup and decorate.<br />
Pre heat oven and bake the cornflakes with 170c for 8 to 10 minutes.<br />
Cool it b4 put in air tight bottle.<br />
