AYAM KAPITAN

Ayam kapitan ini amat popular di kalangan orang Peranakan. Ia amat senang dimasak dan sungguh sedap.

Kapitan Ayam
4 sudu besar minyak sayuran
1 ekor ayam 1.5 kg dipotong 12 keping
500 ml santan diambil daripada 1 biji kelapa parut dan 500 ml air
125 ml jus asam jawa yang diambil daripada 1 sudu besar asam jawa, dicampur dengan 125ml air dan tapis ambil jusnya
Garam secukup rasa

Rempah kisar:
20 cili kering
6 buah keras
15 bawang merah
4 bawang putih
1 cm kunyit basah
1 cm lengkuas
1 cm halia
3 batang serai, dihiris halus
3 helai daun limau purut, dimayang

 
* panaskan minyak dalam kuali, tumis rempah kisar dgn api sederhana sehingga wangi. Masukkan ayam, kacau rata dan masak,tutup periok dan masak, selama 15 minit.
* masukkan santan dan biarkan merenih, baru masukkan jus asam jawa.
* perasa dengan garam dan masak sehingga kuah pekat dan ayam lembut. Hidangkan panas bersama nasi.

Chicken kapitan is very popular ciusine among the Peranakan community,  this dish is cook using mostly typical Malay spices and its easy to cook.
Kapitan Chicken
4 tbsp vegetable oil
1 chicken abt 1.5 kg cut inti 12 pieces
500 ml coconut milk extract from 1 grated coconut and 500 ml water
125 ml tamarind juice made from 1 tbsp tamarind pulp mixed with 125ml water and strained
Salt to taste

Spices paste:
20 dried chillies, seeded, soaked in water and drained
6 candlenuts
15 shallots, peeled
4 garlic, peeled
1 cm knob tumeric, peeled
1 cm knob galangal, peeled
1 cm knob ginger, peeled
3 stalks lemon grass, finely sliced
3 kaffir leaves, shredded
*combine all the spice paste in the food processor and blend until smooth.
*heat oil in the wok, saute the spice paste over medium heat until fragrant. Add the chicken, stir well and cook, covered, for 15 minutes.
*stir in yhe coconut milk and bring to a simmer, than add tamarind juice.
*season with salt and cook until the gravy is slightly thick and chicken is tender. Serve warm with rice.
