ASAM PEDAS MELAKA

ASAM PEDAS MELAKA

Bahan-bahan:
3 keping ikan tenggiri ( ikan lain pun boleh )
Air asam jawa secukupnya
1 biji tomato _ dipotong²
5 biji kacang bendi
1 batang serai _ diketuk
1/2 kuntum bunga kantan atau daun kesum secukupnya
Minyak masak
Garam secukup rasa
Gula jika suka

Bahan-bahan Kisar
5 ulas bawang merah
10-15 biji cili kering
1/2 inci halia
1 sudu teh jintan manis
1 sudu teh jintan putih
1/4 sudu teh lada hitam
1/2 inci kunyit hidup
2 ulas bawang putih

Bahan-bahan Tumis
1/2 biji bawang besar _ di hiris
1/4 sudu teh biji sawi
1/4 sudu teh halba
2 tangkai daun kari



Cara²

Panaskan minyak dan tumis bhn² tumis sehingga wangi.
Kemudian masukkan bhn² kisar dan tumis sehingga pecah minyak.
Masukkan air asam jawa dan air secukup kegunaan.. Masukkan garam dan gula secukup rasa.
Setelah mendidih.. masukkan ikan, kacang bendi, serai dan bunga kantan.. Biarkan sehingga kesemua bhn tadi masak.
Akhir sekali bolehlah d masukkan tomato.
Tutupkan api dan hidang.


Asam Pedas MELAKA

Ingredients:
3 pieces of mackerel (other fish can)
Tamarind juice
1 tomato- cut
5 pieces of lady finger
1 stalk lemon grass crushed _
1 / 2 torch ginger flower or kesum aka laksa leaves
cooking oil
Salt to taste
Sugar if desired

Blend ingredients
5 shallots
10-15 dried chillies
1 / 2 inch ginger
1 teaspoon aniseed
1 teaspoon cumin
1 / 4 teaspoon black pepper
1 / 2 inch turmeric
2 cloves garlic

Saute Ingredients
1 / 2 large onion sliced _ in
1 / 4 teaspoon mustard seeds
1 / 4 teaspoon fenugreek
2 stalks curry leaves



Method:

Heat oil and fry until fragrant stir-fry saute ingredient
Then add blend ingredient and stir-fry until nice smell.
Add the tamarind juice and enough water as desire for gravy .. Add salt and sugar to taste.
After boiling .. add in fish, lady , lemon grass and ginger flower .. cook for few more minute.
Finally, add tomatoes.
Off the fire and serve.
